Healthy Living Blog!

Knock knock… anyone out there?

It’s so quiet in blog land lately.   Hopefully everyone is out enjoying the last few weeks of summer *tear*…  I love blue sky… DSC_1984 It has been SMOKIN hot here.  People only seem to be leaving their houses if it’s to head out to the lake, or somewhere air conditioned!

Anyways, there is something exciting going on in the blogging world!

Lindsey from Sound Eats (and a few other partners in crime) have created a HEALTHY LIVING BLOG page.

image It has lists of a whole bunch of healthy living blogs from all over, plus you can search out bloggers in your area!!

If you have a blog, be sure to send her an email to become part of the fun!!

It’s such an awesome resource!!  Thank you Lindsey for creating this!!

Caramel, Socca and Sweetness

Happy Monday!

Hope your weekend was amazing!!!  We went out camping on Wednesday and ended up having to come home on Friday due to me being SO SICK.   I think I got food poisoning.  No idea where I got it from, but it was the sickest I’ve been in a long time.   I’m feeling a better today, but totally exhausted from being so sick, so I’m going to keep this short.

I have some blogger recipes to share.   Pre – camping and sickness – I was cooking up a storm, all recipes that I had found on bloggie friends blogs!!

First off…  Averie’s Nut Butter Filled Caramel Bites.

I subbed walnuts for pine nuts -  because pine nuts are so expensive here.     *Swoon*DSC_0147

Drool…

You should probably make these, they were sooo good!!

Next up – The Pure2Raw Twin’s Socca………

It was a bit of an epic fail… I don’t know what I did wrong.  I sprayed the pan and everything, and it still stuck… plus, it just didn’t taste super good.  I know I did something wrong though, because I have had this before and it was awesome!   I still ate it though.

Bottom right. DSC_0150

with roasted veggies and salad.

I will definitely try this recipe again though, or maybe one of the other ones that are on their blog, because I have faith that it’s good!!

I also wanted to share some cute pictures that my kids from camp drew for me on the last day… so cute.

DSC_2131 Aren’t they just so sweet.   Kids are so awesome.  I miss my little camp kiddies!!  3 more weeks until I go back to school, and then I’ll be working full time again with them!! :)

Last but not least… Lancey poo wanted to say hi… DSC_2100 He’s so cheeky. We decided (while camping) that we should have named him Berkley.   Lance was is pound name, and we didn’t want to change it… who needs more trama/confusion after being in the pound!!

Have a great day, and I’ll be back to posting once I start eating more exciting than white bread and bananas :)

Scones Oh Beautiful Scones!

I was totally inspired by this lovely lady with her scone recipe this morning.   This lovely lady was inspired by this lovely lady who was the creator of these lovely scones…

I broke the rules a bit, and instead of using the tea bag and lavender they suggested I used a Chai tea bag that I broke open….
I heart Chai…

I soaked it in the milk and then added it to the recipe.  As well as to the icing/glaze… (I added a touch of vanilla to the glaze as well) DSC_0159
As for the recipe,  for the butter I used coconut oil and for the milk I used almond milk…  DSC_0156  Let me be honest.  THESE ARE AMAZING!! I love the spicy flavour of the chai, mixed with the sweet glaze.

Mmmm… Thanks Ilana and Heather for this amazing recipe!!

DSC_0161 Anywhoo, we are off camping (and I’m taking my scones with me!) So I shall see you on Monday(ish)

Is there a certain tea you would use to make scones??

I was thinking ginger might be delish!!
Ciao for now,
Jess

Proper Picnic

So this weekend we celebrated my maid of honor to be’s upcoming wedding!   When her and I chatted about her dream for her shower, she said “proper picnic" please!!

So together with her mom, we created this fun wedding shower to celebrate all things love!! haha…

Unfortunately the day before it poured rain, so the ground was a little soggy, so we had to bring tables and chairs, but we still went with the ideas!

The beautiful location – it’s a heritage site here and also a bed and breakfast, which is hosted by an onsite Author.

DSC_0055 DSC_0054 We set up in the location way down on the lawn, close the the river…

Some of the food included; lavender cookies, lemon squares, cucumber sandwiches, watermelon, devilled eggs, amazing olives from an olive bar, pickles, cheese, fresh scones with butter and jam.    Such a great spread!
