Have you tried Bi Bim Bap before?
I have never tried it, but I’ve seen it on a few blogs, when they have eaten out at restaurants! I’ve always thought it looked great, but we don’t have a Korean place here, so I haven’t gotten to try it yet…
Until today!
I googled my heart out until I found a great recipe – Dr. Kim has a Super Easy to follow one. (ps. his blog has some awesome recipes FYI)
Anywhoo. I just used it as a guideline and I came up with this.
I decided not to use the egg, as I wasn’t in the mood for an egg!
Wondering what everything is??
I cooked up some long grain white rice (but I’m sure you could get creative with the grains)
The carrots I did just like in the recipe, also the spinach is done per the recipe!
Cabbage I sautéed up with some sesame oil (about 1/4 teaspoon) and some chilli sauce.
Mushrooms I soaked and cut up into pieces
Tofu I cooked with some sesame oil (1/4 teaspoon), and some chilli sauce + soya sauce.
In the middle I added sesame seeds and chia for a little crunch!
Because I didn’t add the egg, I tossed this all with a little bit of soya sauce and more chilli sauce! It was SO good… and I made enough for lunch tomorrow, as I think it’s an awesome lunch for on the go! (almost like my sushi salad!)
This was SO good and I can’t wait to have more for lunch tomorrow!!

To make life easier, I used a mandolin to cut up the carrot and the cabbage! They are so fun, but OH SO DANGEROUS! lol
