Savoury Hippy Loaf

Ok ok… so don’t take any offense to the title… there is a meaning behind it…

Once upon a time…

Wait… no, not that kind of story.

Ok, so I wear Birkenstock type shoes, eat granola, drink green smoothies, and I live on the West Coast… 

My husband is from small town Newfoundland.

Do you know what that means?

(besides a bunch of terrible stereotyping)

A lot of  harassment about being a hippy!  And you know what?  I embrace it! Smile And say BRING ON THE HIPPY!

Even while I was growing up, my friends used to tell me “you’ll always be a hippy at heart” – and so I will…

Once again, I was inspired by…   you guessed it OH SHE GLOWS – and while her recipe sounded fabulous – I felt like it was just calling for some mushrooms and some other savoury goodness… Enter recipe inspiration #2 – Ok this one had mushrooms and a few other yummy things… but still, not quite right.   Enter RAW ROSE, she finished off the inspiration and the Savoury Hippy Loaf was born…

Savoury Hippy Loaf

Ps.  I am drooling as I write this because it’s cooking in the oven and it smells AMAZING

1 can of beans (I used pinto)  rinsed and drained

1/2 cup walnuts

1 TBSP sunflower seeds

1/3 cup oats

2x celery ribs

2x carrot

2 TBSP raisins (trust me)

3x green onion

2x clove garlic

8 dried shitake mushrooms (soak in hot water until rehydrated *save mushroom water) – Be sure the SQUEEZE out mushrooms before putting in food processor

2 TBSP savoury (I like it really herby – so use less if you don’t)

2 TBSP nutritional yeast (optional, but I heart it)

2 tsp thyme

1/2 “chicken” bullion – I use the vegan one that is soft – so you can easily tear it apart)

1 tsp olive oil

2 TBSP balsamic vinegar

1/4 cup egg whiles  or 2 TBSP chia mixed with 1/3 cup water

GLAZE (which you have to go find out at Oh She Glows)

I followed it perfect – except (haha) I doubled it and didn’t put in apple butter… what is apple butter anyways?

PREHEAT oven to 350

TOAST Walnuts and Sunflowers seeds – then toss in food processor

SAUTE celery, carrots, green onion, garlic, raisins, thyme and savoury in some olive oil – add 1.4 cup mushroom water (mixed with 1/2 bullion cute) to cook until carrots JUST become tender.  Transfer into food processor.

ADD rinsed and drained beans to food processor + nutritional yeast + oats and mushrooms

WHIZZ food processor until all ingredients are at desired chunkiness and everything is mixed together –

Transfer into a bowl – good time to give it a taste!! 

Does it need more salt, more savoury, thyme?  How about pepper or garlic?

Finally add in 2 TBSP balsamic vinegar (or to taste) and finally add in egg or chia egg.  Stir together!

use an 8x8 baking dish with a piece of parchment paper in it (see easy clean up)!

Spread with glaze and bake at 350 for about 60 mins or until it starts to brown and look crumbly.

Serve with a salad (with this dressing) and you have a perfect hippy meal!

I’ve eaten all this loaf since I made it! It was awesome in a wrap, served over salad, on crackers, on a pita with hummus!   I probably wouldn’t use the glaze again, but I really was just in a savoury mood while eating it!

I will be making this again for sure!  It was delish!
