Time for a Guest Post with a Pad Thai Recipe!

Hello to my lovely readers!!

Today I’ve got something good for you!!  A guest post from one of the newest blogs out there! Her photos are gorgeous, her recipes are fantastic and she has one of the cutest dogs ever!!

I try to give readers some insight into IBS and Gluten-free living, as I suffer from both.  You'll always find a variety of yummy recipes on my pages.  I really appreciate Jess letting me be a guest blogger on her site.  Thanks Jess.  Here is my story.



As long as I can remember I've been plagued with painful upset stomachs that would hit me without warning (at school, at home, while driving).  These stomach attacks would have me running to the washroom for several hours at a time, and curled up on the couch in between attacks with a bowl beside me due to nausea.  The cramps would be excruciating. I'd be curled in a ball not knowing what to do. I'd be in tears until I was able to relieve myself and then the cramps and nausea went away until the next attack came about (usually about 5 minutes apart.)  My mom would brew up some Chamomile tea for me since it seemed to be the only thing that worked to settle my cramps, but really the cramping only stopped once my bowels were completely emptied out.  Not knowing any better, I used to blame my issues on food allergies or intolerances, yet never went for allergy testing.  I try not to run to the doctor for every ailment, but after 16 years of suffering with on-again, off-again issues, I decided to finally get checked out. 


I found a wonderful doctor where I now live who listened to my concerns and wanted to actually help me figure out what was going on. I went through a series of blood tests and she sent me to the hospital for a few tests to rule out any underlying intestinal problems.  Let me tell you the test was not pleasant.  I had to fast the night before and then got to spend about 5 hours at the lab.  They made me lie on an x-ray table and sip through a straw some sort of milkshake that tasted like orange and chalk.  As I would take small sips of the substance, the table would move into different position and they would track how the liquid passed through my system.  Just when I thought it was all over the nurse gave me another LARGE container full of more milkshake to drink in the waiting room.  They would then call me back every 15 minutes or so to take more pictures as it was passing through my bowels.  I did learn that my bowels pass my food rather quickly, which is one of the reasons I get these attacks.  Lucky for me I was also the proud recipient of a colonoscopy that same day.  My doctor called me into her office a few days later to inform me that the tests came back normal, which was good news for me. 


My diagnosis was IBS.  At least now I had a starting point to try and treat my digestive issues.  My doctor sent me to our local health food store to pick up some Probiotics and Pancreatic Enzymes.  She also referred me to a nutritionist and gave me the names of a few books to buy as I now had to change my entire lifestyle and eating habits. The hardest discovery I made that I've had to deal with was figuring out that I am also gluten-intolerant and that plays a huge role in my IBS...I don't like the fact that eating white pasta, white bread and white rice agrees with me more than the whole wheat varieties.  We all know that refined carbohydrates contain no nutritional value and convert to sugar quickly in your body, but it sure makes a difference on my belly.  However, since getting things under control I'm slowly incorporating some whole grains back into my diet, as long as I don't overdo it. 


I am happy to report that my stomach attacks are far and few between..they seem to hit when I don't eat well or during times of stress.  Obviously I'm doing something right.


I also became a lot more active, which has helped keep my digestive tract happy.  I joined a gym, bought my mountain bike and got active. I am in love with Kickboxing and this year I’m playing my 3rd season of ice hockey too. I also decided I wanted to give myself a challenge and started training for my first running event.  This was a major accomplishment for me since I have never been a runner because of the large size of my breasts. (I had breast-reduction surgery in 2007).  In May of 2009 I ran/ walked my first 32km event (The Galloping Goose Linear Walk), followed by the 64km big one in June of 2009 (The Great Walk – North America’s Toughest Pledge Walk).  I've lost about 15lbs through a combination of eating right and leading an active lifestyle.  This year I am gearing up to compete in 2 events, an Adventure Relay Race called the Snow to Surf as well as a bike/run race. 


Today, I am finally happy with my physical status..getting my stomach issues under control, I love working out and being active and feel all around happy.  I am also blessed with having found a wonderful man to share my life with. 


PAD THAI

gluten-free and dairy-free

The ingredients

  • 8 oz  thick rice-stick noodles (gluten-free)

  • 2 Tbsp vegetable or peanut oil

  • 2 garlic cloves, chopped (I used 3)

  • 2 fresh red chillies, seeded and chopped

  • 8 fresh Chinese chives, chopped

  • 2 Tbsp fish sauce (gluten-free)

  • juice of 1 lime (I forgot this part)

  • 2 tsp.  brown sugar (I used sucanat)

  • 2 eggs, beaten  (for dairy-free substitute 2Tbsp ground flaxseed with 6 Tbsp water)

  • 4 oz  bean sprouts

  • 4 Tbsp chopped fresh cilantro

  • 4oz  unsalted peanuts, chopped, plus extra to serve

  • crispy fried onions, to serve ( I omitted this).

Method

Soak the noodles in warm water for 10 minutes, drain and set aside.  I also prepared all my ingredients before beginning to cook as the cooking process itself goes relatively quick.  I also didn’t have a wok, so I used my cast-iron frying pan.

Heat the oil in a wok and stir-fry the garlic, chillies and pork for 2-3 minutes.  Add the shrimp and stir-fry for an additional 2-3 minutes.

Add the chives and noodles, then cover and cook for 1-2 minutes.  Add the fish sauce, lime juice, sugar and eggs.  Cook, stirring and tossing constantly to mix in the eggs.

Stir in the bean sprouts, cilantro, and peanuts, and serve with small dishes of crispy fried onions and extra chopped peanuts.

It was a popular meal with the boyfriend.  He even had seconds Smile  Compliments to the chef !!  I was a little hesitant at first because chilli peppers usually make things spicy, but it was just perfect.  I will be making this one again very shortly.

Artichoke Hummus

Happy Sunday guys!!

I usually don’t post on Sundays, but I just made an awesome recipe that is PERFECT to whip up before your busy school or work week!

I know there are BILLIONS of recipes for hummus our there, but I am here with yet another.  And the only reason I am posting it, is I haven’t seen one quite like it, and I have a great technique to rave about!

 

Creamy Roasted Garlic Artichoke Hummus

1 can chickpeas/garbanzo beans

1 head of roasted garlic (slice top off garlic, drizzle with oil and put in oven @ 350 until soft)

5 peices jarred marinated artichokes

1/2 fresh lemon

Rinse and drain chickpeas

HERE’s THE HINT TO CREAMY HUMMUS – You need to peel off all the skins… it takes about 15 minutes but it’s SO WORTH IT!

It’s amazing how much smoother the hummus becomes!!

Add chickpeas to blender or food processor (I used my Vitamix)

Then add in your artichokes … don’t rinse off oil…

Then add as much garlic as you can handle (Saving some for garnish)

Up next… cut a lemon in half and cut or peel off skin… and YUP, toss into the food processor!

Then add spices of choice – I added 1/4 tsp garam masala, 1/4 tsp salt, 1 tsp zataar… but feel free to add anything you like!!

Blend up, adding water or lemon juice until smooth!!

This was fantastic – and pretty easy!  The skinning of the chickpeas is totally worth the effort!!

As is roasting the garlic, because the taste isn’t so harsh!

This recipe probably cost me under $3.00 and made much more than my beloved Sabre… Smile

ZUMBA Madness!!

Good morning!!! Smile
I’m so excited, I was just given a 2 week pass to our ladies gym, and it offers Zumba 4x per week and I can make it 3 of the 4 times!! WOOOT (yes I just said WOOT)

A lot of you have mentioned you are a little nervous about trying Zumba, so I thought I’d put together a “you tube workout video” for you!   When I am at home doing Zumba, this is how I do it… I add about 10 songs to my you tube play list, and then I crank up the music and go!!  Some of them are not technical “zumba” but they are still fun!

Have fun with the music, and don’t worry about what you look like, NO ONE is watching!

Help Needed…

Super quick post from me today.

 

I NEED YOUR HELP!

Our wedding cake in Mexico will not be dairy free, as they don’t do that.  I need something that I can bring down there to have at cake time (cake smushing in each others face).

It will be out of the fridge for about 24 hours and then I have a fridge, but it has to last from Thursday – Tuesday.

Ok… I know you bloggies can figure this one out for me!! Smile 

 

Also just a note – Signature Vacations/Sunwing still is truly hated.  The only thing figured out is that this trip is going to be WAY more $ now, because Sunwing is not honouring what they said!

What can one do?  Thank you for all your great works/tweets, I appreciate it…

Stylish Blogger

So today marks the 1 month until Mexico date, and I woke up super excited until I checked my messages…

As far as the blog goes,  no big deal… I forgot that my visa ran out and it was time to pay for my blog domain name again…  messy situation diverted..

But then there was the travel agent…

Apparently as of yesterday, all of the flights leaving Vancouver to Mexico were cancelled… that effects 10 of us.  The only option that the EVIL SUNWING.ca gave us was SUPER crappy flights (with about 100 stops) or a full refund…

A full refund?  Right.. because flying down to my wedding IS NO BIG DEAL…  Just for the record… SUNWING SUCKS…. but my travel agent is working hard at figuring it all our (thanks Sara)

Pizza Pie

A new yummy breakfast… 

I’ve seen people “frying” bananas in blog land… I didn’t really get it, but now I do!!

Cinnamon raisin English muffin with peanut butter and fried banana!!

Frying the banana makes it warm and caramely!  MMMMMMMm

Lunch!!

I went to a friends the other day, and she made these salad rolls with wraps and smeared curry paste on the rice and filled it with veg… I followed her lead and it’s SO GOOD!

I just used a mild curry paste (red curry I think), and after the rice was cooked, I mixed it into the rice, then added it to the warp with cucumber, peppers and peas!!  In a dream world, I would have had fresh cilantro in the mix too! YUM!

Dinners – I’ve had some good ones!

I followed the salad wraps with a tasty VERY random curry…

In the mix is potatoes, mushrooms, zucchini, almonds and mango with some curry paste, about a tsp of coconut concentrate and some water – served over rice!

One trick I learned with curry,  if it’s too hot, add a little sugar, it cools it down!!

This was a tasty meal!! I was pretty excited for the left overs!

AND THEN IT HAPPENED!

I was inspired by Noelle at Opera Singer in the Kitchen

and her Mediterranean Pizza

I used the recipe for dough from the pizza yeast jar.

Perfect Pizza Dough

Makes 1 regular 12 inch crust

Combine 1 cup all purpose flour, 2 1/4 un-dissolved pizza crust yeast,  1-1/2 tsp sugar, 3/4 tsp salt… 

Mix together in a bowl.

Add in 2/3 cup very warm water ,

Mix until well blended – the dough ball should be slightly sticky.

Kneed for 4 minutes

Flatten onto greased pan.

Bake at 450

I bake the crust for about 5 minutes and then flip it and add the ingredients to the cooked side!

My ingredients included:

Hummus for the base,  nooch and pepper sprinkled on top

Marinated artichokes and sundried tomatoes

Zucchinis, peppers, onions and mushrooms

All baked to perfection.

While it was cooking, I quickly cut up some lettuce and massaged in some olive oil, balsamic vinegar, zataar and pepper and added the salad to the top of the pizza!

The salad made the pizza extra delicious!! Gave it even more flavor!

Out of the many pizza’s I have made in the last few months, this takes the cake for sure!!   The left overs – minus the salad were amazing too!!

What kind of blogger are you?

So with all the craziness of school, I start to question the future of Dairy Free Betty…  not that I am going anywhere, but just where to go with this blog!

I love sharing food, recipes, goodies, inspirations, photography, and life stuff and hopefully you enjoy reading it!!  I use this blog as some what of a diary… somewhat of a way of connecting with fantastic people vessel… and sometimes to hear opinions, and of course to help people that can’t have dairy with anything needed!

Back to School…

Hey guys,  sad to say but it’s time for me to get…

Which means I won’t be posting as much again!! 

My semester is crazy again, and just as I was thinking the 2nd semester would be easier, I found out my course content… EEK is all I can say!

I AM being positive in saying… isn’t it awesome that as of right now I have 4 exams the week after I get back from our wedding?  haha… at least I get back on a Friday and will have until Monday afternoon to study my little heart out!

It’s a NEW YEAR!

 

Lack of posting again – due to having a big nasty cold…  Usually I zap it with oregano oil, but this time it didn’t work…   so I have been loafing on the couch…

So I’ll do a re cap of the last few days!

On New Years Eve Day, we went for a beautiful (cold) walk and I snapped some photos!

I’m in love with taking photos,  it’s something that makes me so happy….

After that, I laid on the couch until we went out for New Years at our friends place!  It was a super mellow night (which was perfect)!   I am feeling really positive about 2011… I think it’s going to be a good year.

As for resolutions, I don’t REALLY see the point, but I have a few things to work towards;

---being more positive (seeing the opportunity in everything) – I have fallen into a pattern of just automatically going negative with most things…  no more!

---More yoga!!  I think that’s good for everything!!  I down loaded this ipod touch app – which I think will be great! (Note, I am SO in love with my iTouch – it’s easily the coolest thing EVER!)

---Maybe run a 5km race?

I’ve done it before a few times, but I would have to start the couch to 5km program again.  I’m finding it hard to get motivated with school, but my schedule has changed for this semester, it’s a totally wacky schedule (9+ hours of class time per day 1x per week!) but it opens up more time to get out.

---Make more healthy foods!  I went from eating UBER healthy to having to change my diet due to some stomach problems –the new diet includes a lot more soluble fibre (aka french bread), but I have to focus on the healthier soluble fibre and less of the fresh white bread!!  Any soluble fibre food (recipe) suggestions?

---BE PRESENT – I have no idea how to do this, but I want to be more present in life, especially with our wedding coming up. 

There ya go, things to focus on!!

Moving on…

I also made some more of my new FAVORITE recipe!!!  This recipe is fantastic, I subbed chia seeds for flax seeds, and added about 1/4 cup of chocolate chips and only used 1/2 the sugar!

They are so delish!!  They taste bad for you, but they aren’t!!

I’m going to try making them again with fried bananas (aka caramel goodness)
