So on my vacation last week, I promised to start posting more! I’ve already failed at that, but let me explain – we got home Sunday night – Monday I started work again and we expanded our space so it was our opening day of the new space, got my ultrasound done to find out pink or blue… and I started coaching Special Olympics again! It was a busy week – however – I made a meal plan and we stuck to it!
Monday Night – Stir-fry – veggies, chicken and a mixture of sauces (sweet chilli, sesame oil, soy sauce and oyster sauce) served over basmati rice!
Tuesday Night – Creamy Veggie Soup with yummy crusty bread – very similar to this recipe.
Wednesday Night (I work and coach so no dinner for you!) Fend for yourself night
Thursday Night – Homemade pizza – just used a simple pizza dough recipe (on the side of the pizza dough yeast) topped with tomatoe sauce, roasted red pepper chicken sausage & a bunch of veggies. Served with kale salad with homemade dressing!
Friday Night – Pulled Pork w/tangy coleslaw! Very similar to this recipe!
Saturday Night – We both just ate leftovers
Tonight – No idea!!
As for this week, I’m trying to come up with some ideas!
I think that this Lentil Walnut Apple Loaf… might be on plan for tomorrow – but I’ll half the recipe since hubby doesn’t eat it! (I might even make it today, it’s one of my favorite recipes!)
I’m also making some of these for lunches this week. Healthy Banana Cranberry Oat Bars.
What I’m thinking for the rest of the week; spaghetti, bean/chicken burritos, maybe curry and we are going for sushi on Friday night so that’s taken care of!
