No-Bake Peanut Butter Bars & a GIVEAWAY

 

One of my favorite things about blogging (other than being able to hopefully help people out) is that publishing companies often offer me up free review copies of their new cookbooks that have just or are about to be published!  When BenBella Books, Inc contacted me this time to check out the China Study Cookbook by T. Colin Campbell, PHD, I was super excited!

I read the China Study a few years ago – if you have not read this book please do.  It’s very eye opening.  From the website;

“In The China Study, Dr. T. Colin Campbell, Professor Emeritus at Cornell University, details the connection between nutrition and heart disease, diabetes and cancer. Recognized as the most comprehensive nutritional study ever conducted on the relationship between diet and the risk of developing disease, The China Study cuts through the haze of misinformation and examines the source of nutritional confusion produced by government entities, lobbies, and opportunistic scientists.”

After reading the book, I felt inspired to follow the ideas laid out in the book, I remember wishing that there were recipes at the end – so I could take steps towards living a more whole food, plant based life.

Fast forward a few years and they now have published a book that is the “Official Companion to the China Study” and I’m lucky enough to be able to share one of the yummy recipes with you & offer a giveaway for the cookbook for anyone in the US or Canada!

It was a natural choice for me to choose a peanut butter/chocolate recipe – because let’s face it – that combo cannot be beat!   Check out the recipe and see below for the giveaway!

No-Bake_Peanut_Butter_Bars-CMYK

No-Bake Peanut Butter Bars

Preparation time: 15 minutes | Chilling time: 1 hour

Makes 9 servings

These bars are rich, creamy, sweet, and satisfying—everything a dessert should be!

1 cup low-fat graham crackers, crushed

1/4 cup crushed walnuts

1/2 cup reduced-fat, unsweetened coconut

1/3 cup natural peanut butter

1/4 cup nondairy milk

1 cup nondairy chocolate chips

5 tablespoons rice or almond milk

1 | Crush graham crackers in food processor. In separate bowl, add walnuts, coconut, and peanut butter. Stir in crushed graham crackers.

2 | Slowly add milk and mix. If mixture does not hold together, continue adding additional milk until all ingredients stick together. However, don't make it too soft, and, if necessary, use your hands.

3 | Spread mixture evenly into a 9 × 9 nonstick baking dish.

4 | In a saucepan, melt chocolate chips together with rice or almond milk over medium heat. Stir until smooth.

5 | Spread chocolate mixture on top of peanut butter mixture. Refrigerate for 1 hour or until hardened. Cut into squares and enjoy!

GIVEAWAY–Raw Rose E - Cookbook!

You might remember this time last year I did the basic and advanced Raw Rose Culinary Arts Program. You can read about it here!

During this 2 weeks, I ate some of the most amazing foods!

Anyways – moving on!!!!!!!!!!  Rose has another course coming up July 8-21st.

This includes 3 levels!

July 8-21  Basics, Advanced & Raw Chef Certification  (you can take 1, 2 or 3 of the levels)
or another option is Sept 23-26 Basic only.  This is located between Courtney and Campbell River on Vancouver Island!

Live Delicious!

 

The lovely company Book Pub Co. that has sent me some cookbooks to review has just started up a very awesome “LIVE DELICIOUS” campaign.

It’s focused on transitioning into a vegan lifestyle or just adding more plant based foods into your life…

While I don’t eat vegan, I do try to introduce lots of plant based goodies into my diet and try to eat as healthy as possible too!!

And I really like what Book Pub Co is doing with this campaign… if nothing else, these cookbooks have great new ideas for becoming healthier!

I think that everyone should pay attention to their body and eat accordingly!

Guest Post–Love Love Love

Hola!! 

Well we are in Mexico at this point,  spending the day at “Salsa and Salsas” and then off to our rehearsal dinner!  (btw any creepers, our house isn’t empty, it has friends saying as well as a 95 pound pitbull…  just saying Smile)

I met Kirstina the other day via my facebook page and we immediately hit it off and exchanged about 100 emails!!  She’s a lovely person and as you’ll see SO beautiful and I was so excited when she agreed to do the Valentine’s Day post!

Hello DFB followers:) I'm Kristina from Life as Kristina a blog showcasing my life as a fitness junkie, food lover, bride to be, and everything in between!

The beautiful Jess and I connected a few days ago and swapped messages regarding all things wedding. After the zillion messages we shot back and forth we both agreed that all weddings have glitches, but in the end-you're marrying your best friend (insert your awwwwwww's here). 

Jess asked me to write a guest post for Valentines Day (while she's away getting MARRIED)...of course I said yes-this is Dairy Free Betty we're talking about!

A Berry Good Smoothie (GIVEAWAY!)

Glad you guys enjoyed Bea’s guest post – there should be another one coming up when we are away for our wedding!!

I do… although it’s a little chilly to drink them right now, they are PERFECT after a workout!


A BERRY GOOD SMOOTHIE
This one includes
1/2 frozen banana
4 frozen strawberries
1 tsp Macca Powder
1 TBSP BERRY FORCE from  Prairie Naturals
1 pitted date
1 cup  almond milk
1 tsp cinnamon! (SO GOOD IN SMOOTHIES!)
Oh, and a swack of spinach

If you guys have been reading for awhile,  I’m not a huge fan (and neither is my stomach) of powders added to smoothies…  I tried a few different amazing grass products, and while it tasted good, it upset my stomach,  but I am loving this stuff!  It’s TART (no sugar added) and jam packed full of goodness! And it adds a smoothie bar type taste to your smoothie! (mmmmmm)
Now there is a suggestion to stir this into water – I haven’t had much luck with that, as it gets clumpy, but when I asked Kamelia at Prairie Naturals here is what she suggested…

“I usually add Berry Force to my cup with a 1/4 of bowling water, I give it a good stir and than add cold water.”
