Perfect Pancakes!

Happy Holiday Monday!!!

Glad you guys have enjoyed the last couple of posts! I have a whole swack of them scheduled for this week!! 

We found out (thanks to Ali!!) that the green stuff is chickweed!

I wanted to pop in quickly and tell you about this great pancake recipe I found!

The changes I made;

Used regular flour (didn’t have WW)

I used a DUCK egg instead of a chicken egg (D’s boss gave us duck eggs from their mini farm!)

Swapped brown sugar for artificial sugar!

They were SO good!!  Perfect pancakes!!

They are PERFECT for folding up and adding goodies to too!!   (which I did for lunch)!

Saturday Round Up

Healthy Banana Bread

I asked the hubby the other day what we wanted me to bake, and without hesitation he said BANANA BREAD with chocolate chips!   Just the thought of that made my mouth water!!

Okey dokey, I’m on it!!

Healthy Banana Bread with Chocolate Chips

First mix together in a bowl

  • 2 c flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • Then combine in a separate bowl

    • 3  very ripe bananas squished and squashed!
    • 2 chia eggs (2 table spoons chia seed + 6 TBSP water – let sit 15 minutes) or 2 eggs
    • 1/2 cup brown sugar ( may want to use less if adding chocolate chips, it was a tad sweet)
    • 1/2 c almond milk
    • 2 tsp. vanilla
    • zest of an orange

    Mix wet and dry ingredients until just incorporated.

    Preheat oven to 350.

    Grease a bread pan and add mixture.

    Bake for an hour or until tooth pick comes out clean!

    Slice and enjoy!

    Creamy (no dairy) vegetable soup!

    Wow… thank you for all the comments on yesterday’s post!!  I love Tasha’s idea about the deep purple!!  I will post a picture when I figure it all out!!

    FYI – for those of you that liked the color it was Milk Pail by Martha Stewart!!

    Onto FOOD!!

    A few weeks ago I bought this stuff!! DSC_0250

    Super easy ingredients and pretty healthy too!!

    I took it yesterday in my lunch and had it with some pita bread from the Farmer’s Market and some veggie soup!! and the verdict?

    AMAZING!

    It’s savoury and delish!! (and local YAY!)  If you live on Vancouver Island, look for it, it was about $5.50 for this block and I ate about 1/4 of it for lunch today!!    I found it in the deli section at Quality Foods!

    I love finding new lunch worthy products!!

    As for the veggie soup.

    I served it over fresh spinach with dried chow mein noodles on top (for crunch)

     “Everything but the Kitchen Sink” Soup!

    1/2 green pepper

    4 carrots

    2 stalks celery

    2 precooked potatoes

    4 broccoli stalks

    1/2 head cauliflower

    1/2 onion

    4 cloves garlic

    Just enough water to cover everything!!

    Boiled it together for a few minutes (to make everything a wee bit soft, but not too soft)

    Then I blended it all together (in batches)

    In the final batch I added 1/4 cup cashews (for creaminess)

    To this I added for flavour

    1 tsp lemon juice

    1 TBSP miso

    1 cube (no) chicken bullion

    1 TBSP hot sauce

    and a bunch of spices (I think I added curry)

    S & P to taste!!

    It was tasty, we had it for 2 dinners (with some bread) and then I had it for lunch with the pate and pita!

    Really you can just have fun with it, and add whatever you like!

    I LOVED the spinach in it too! That was my favourite addition!

    Amazing what some paint will do!

    So we have been living in this house for 3 years, it’s CUTE, but I was feeling a bit blah about it lately (probably to do with the weather outside (gray) and my general state of being (kinda gray!)

    Sunshine makes me happy, and today is the first time in a long time we have seen any!!

    ANYWAYS!

    I was getting a little bored of our house, and since we can’t move right now, we decided to spruce it up a little bit and paint!!

    Amazing what $40 worth of paint will do…

    (yes we have plastic on our couches, because otherwise the dog sleeps up there and drools!!!! (ewh!)

    SO SO SOOOOOOOOOOOOOOOOOOOO much better!!  It’s so light and airy now.  It’s not completely finished, as I have to figure out the mantel and I want to re-do the pillows on the couch!!

    Any ideas?  What color do you think would compliment the wall color?

    What I am loving!

    It’s a (Mediterranean) Wrap

    Well here I am once again with a great dinner/lunch.  Super easy and full of flavour!

    My favourite Middle Eastern place makes the BEST fresh flatbread.   They are SO tasty, and the charge $1 each.  Dave brought me one home last week and I was craving something wrappy and Greek flavoured.

    I marinated my tofu in lemon juice, zaatar spice, oil, salt and pepper.

    Then I grilled mushrooms, peppers, onions and the tofu on the bbq. 

    Sliced it all up, tossed it with some balsamic vinegar.

    Then I added everything into the wrap with some hummus and cucumbers

    Wrapped it up and chowed down!!  It was SO good!!

    For school the next day, I chopped up all the veggies and mixed all the veggies (including cucumber) and tofu with hummus and put it in a container and brought the wrap separately.  To eat it, I just used small pieces of the wrap to scoop up the mixture!

    Great lunch, super quick, as you could BBQ everything and keep it stored in the fridge, add the hummus just before serving!

    YUM!!

    Do you like BBQed veggies?   My favourite are onions and green peppers!

    Chicken Curry

    Wow.

    It’s Friday and I have posted for 5 whole days!!  I guess it’s good to get organized on Sunday!!  I hope you guys have been enjoying these meal ideas?  Let me know what you think?

    My next one is a curry.  I don’t have many good pictures, because I was too hungry to wait for the steam to disappear Winking smile hehe

    This one was super easy.

    Pour this

    with some water over chicken. 

    Let it cook until the chicken is almost cooked then add some veggies (mine was cauliflower, broccoli, peas and zucchini).

    Serve over basmati rice!

    Told ya it was easy!!

    Again great for lunches!!

    This curry has a really strong spice flavour, so I wouldn’t recommend it unless you enjoy spicy (not hot spicy, spice spicy! haha).  We weren’t sure we were fans of this particular sauce.

    Also, if you like your curry creamy, add some coconut milk to this – we wished we would have, it would have made it better!!

    I chose this one because the ingredients are simple (and I like simple)– Onion, sunflower oil, spices, garlic, tomatoes paste, fresh ginger,salt, water and lime juice!

    Super Easy Dinner!

    Well hello again!!

    I am trying hard to write posts for every day of the week, so I am sitting here on Sunday writing away, all the tasty things that I can think of!!    I don’t want to leave you guys hanging!!!

    Ok, as you have probably seen lately, I haven’t been eating much meat.   Due to all my wacky stomach problems, meat hasn’t been my friend lately.  I still have chicken, fish and shellfish, but as for the rest, no thank you!

    Prawns have always been one of my favourite things. This is the easiest prawn recipe out there and it’s so tasty!

    I sautéed prawns with some Thai chilli sauce and a tiny bit of coconut cream concentrate (which I LOVE), and then sprinkled it with coconut after it was finished.  So easy and so “finger licking” good!

    For the sweet potatoes I used the same method as the potatoes from yesterday.  Sliced them up, tossed them in cold water, dried, and tossed with coconut oil, curry powder and brown sugar.

    As for the broccoli, I did it my favourite way!!  Roasting it!!  Tossed it onto the oven, drizzled with a wee bit of oil and salt/pepper.  Cooked until it turns slightly brown.  So good!

    This whole meal took about 30 mins – if that.   And it was fantastic, easy and it was perfect for lunch the next day too! (with a little chilli sauce on the side)

    Stir-fry with Veggie Noodles

    So life is whizzing past at the speed of lightening!

    I am LOVING my practicum, but I’ll be honest, all I’m doing is working, cooking and sleeping!!  But the Eats have been tasty!! (and great for lunch the next day!)

    Here is an awesome dish that I had last week!!

    Delish stir-fry with spiralized daikon radish and zucchini, stir fry noodles, veggies, tofu and cilantro.

    It was so great and I LOVED the veggie noodles in it, it lightening up the dish, and filled me full of veggies!

    and it was quite pretty too!!

    I cooked the veggie noodles a tiny bit, at the end of cooking the rest of the stir fry, so they were still crispy!

    As for sauce – I used some sesame oil, soy sauce, Chinese 5 spice, garlic, dried ginger and a bit of stir-fry sauce.

    Awesome for lunches too!   I got lots of drools in the lunch room!! hehe

    Mama Pea Mmm Sauce!

    So if you have yet to try Mama Pea’s Mmm Sauce, you are missing out!

    I’m not going to lie, it wasn’t love at first bite, but after a few bites, I was addicted!

    I used it as a dip for salad rolls! So awesome!

    And I used it in a Buddha Bowl of sorts – Sprouts, Tofu, Sautéed Kale

    and then as a dip for my French fries!!

    PS. I FINALLY figured out the secret to really awesome French Fries.

    Slice up potatoes and put them in COLD water.   Dry thoroughly!!   Coat with coconut oil and spices.  Cook on 375 until crispy!  They were SO good!!

    ps.  The rest of that plate includes kale sautéed in sesame oil with salt and sesame seeds and BBQed trout!

    Anywhoo. I highly recommend making Mama Pea’s Sauce – you won’t regret it!!
