Healthy Banana Bread with Chocolate Chips

First mix together in a bowl

  • 2 c flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • Then combine in a separate bowl

    • 3  very ripe bananas squished and squashed!
    • 2 chia eggs (2 table spoons chia seed + 6 TBSP water – let sit 15 minutes) or 2 eggs
    • 1/2 cup brown sugar ( may want to use less if adding chocolate chips, it was a tad sweet)
    • 1/2 c almond milk
    • 2 tsp. vanilla
    • zest of an orange

Mix wet and dry ingredients until just incorporated.

    Preheat oven to 350.

Grease a bread pan and add mixture.

Bake for an hour or until tooth pick comes out clean!

    Slice and enjoy!

    3. Banana bread + chocolate chips = THE BEST. Your banana bread has such a beautiful color, and it looks like the yummiest texture. Orange zest in banana bread? My new favorite idea. Can't wait to try it!

    6. Banana bread baking is my favorite smell on earth. True story. This looks similar to the one I make - low in fat, so I can add plenty of chocolate chips! :P

    7. Who doesn't love banana and chocolate! Have you tried whole wheat pastry flour? It's my new discovery and I love it. I find the texture as light as refined flour, but you get the whole grains too.

    13. I'll have to give this a try with gluten free flour. It looks yum! We can eat eggs, but chia is so healthy - I like that idea.

My 3-year-old son had severe eczema until he was diagnosed with food allergies a few months back. I have a blog that shares our family’s battles with eczema, allergies, and asthma (yes, lucky guy has that too).

I think the key is to learn from one another, so the more information out there to the masses, the better. With this in mind I’ve started a blog hop for anyone dealing with allergies, eczema, or asthma, either for themselves or as a caregiver. If you’re interested in joining, please add a comment. I’d love to welcome you to the group. http://itchylittleworld.wordpress.com/blog-hop/

      Thanks.
