Aloo Gobi Recipe!!

Hello lovelies!!

Hope you all had a lovely weekend!!!

I’m here with a TASTY recipe!!  But first…

For anyone living where I live… HOT YOGA is opening up here in November… I am so excited for it!!    I even tried hot yoga the other day (AKA Yoga in front of the fireplace), don’t laugh, it was SO hard…   and my muscles go stretched like CRAZY!!

I have been doing tons of yoga and LOVING it!!  And then today, I went for a run (first one in FOREVER) and I did pretty good, better than the last few times, so the YOGA is helping!!

Ok… onto the recipe…  I don’t have any original pictures, as it was late and no more natural light left…  so I borrowed one!! :)

Without further Adoo… here is the Alooooo haha..

Aloo Gobi.

  • 1 TBSP oil of choice
  • 1/2 head cauliflower
  • 3 TBSP curry powder
  • 1 tsp sea salt
  • 3 potatoes – unpeeled
  • Siriachi – to taste

In a large pot, heat oil and drop in cauliflower, stir fry until it’s a bit brown (this adds extra flavour)

Once cauliflower is a bit browned, add in curry powder and salt. Stir until cauliflower is coated with curry.

Add cut up potatoes (I diced mine, to make it cook quicker)

Cover with water.

Simmer until it becomes creamy looking and potatoes are cooked!

Add siriachi sauce to taste ( I used about 1 tsp) add cilantro if you like.

Give it a taste, you might need to add some more curry or salt, as the potatoes seems to suck up all the salt.

Serve over basmati rice!!

It was SO good…  Awesome for leftovers or to freeze!!
