Sushi Salad!

Oh wow…

I just had one of the yummiest lunches ever!  I literally just put down my chopstick because I HAD to tell you about it!!

I accidently burned the sushi rice, so it was a wee bit too crunchy to make real sushi, so I adapted it and make a SUSHI SALAD!!

Ohhhhhhhh my gosh…. it was sooo good!!

SUSHI SALAD

Sushi rice

Cucumbers

Avocado

Red Peppers

Sliced up RAW nori

Sesame Seeds

For the sauce – I used some Japanese Mayo, Sirrachi and Soya Sauce

The possibilities for this are endless… (and delicious!)

Raw… rice-less sushi!

Wow… I just tested out an AMAZING recipe – inspired by this fabulous post.. 
PS if you don’t already read this blog, it’s fantastic, I highly recommend it!!


Introducing RAW… rice-less sushi!
First off I soaked a bunch of sesame seeds for about 3 hours.
Then blended them together with some soya sauce and lemon juice. Until a rice consistency.

Spread out sesame seed mixture on Nori

My sushi is NEVER complete without some spicy mayo!
Not raw, but whatever!! :)   Mix these two together!

I didn’t end up taking great pictures, because I just wanted to eat it soooooo bad!! :)

A gift for you… a gift for me!! :)

So I was SUPER happy yesterday when Elizabeth sent me a message saying that the package I sent her had FINALLY been received!! 
We did a cross border exchange and it was SO FUN!

I am VERY interested in doing this again, with someone from the US or anywhere else really! As I’ve said before, especially somewhere close to Trader Joes as it looks like it has SO MUCH GOOD STUFF!   Let me know if you are interested! (and of course it would all have to be dairy free stuff!)

I can’t wait to receive my box, I promise to write all about it!!

Then the mail came and I got ANOTHER goodie!!

I shall give you a review once I’ve given it a go!  Veggie pasta is in my near,near future!
Last night for dinner I made some very filling/comfort foodish dinner.

Remember the dip I made the other day with roasted peppers, cashews, sesame seeds, well I spread it on a brown rice wrap and with kale, mushrooms and 1 egg…. DSC_0743

Wrapped it up and served it with some veg and fruit – it was so amazing and full of flavor!

I have been drooling over the breakfast cookie recipe from Tina
I used it as inspiration and made this for breakfast

Oh yes, this will be a new breakfast staple for me.  I felt guilty eating a cookie for breakfast, but it was full of loads of good stuff. 
Plus I had it with a green monster, so I covered all my nutrition bases this AM!

*sigh* then I decided I needed some “self care” today – after having an appointment to talk to someone about my little non friend called anxiety.   She suggested I go do some things that make me really happy.  

Sushi makes me really happy! ahaha

I had one little bite and it was tasty!
It tasted crunchy, salty, and sesamey… I can’t wait to eat more!

Anywhoo… must do some cleaning up before heading to work.

Also must study tonight, as my first exam is NEXT THURSDAY! EEK!

Ps.  While I was “talking to that lady” today – I mentioned something for the first time out loud and thought I should pass it along.
I find that some of my blog friends are more supportive than my real friends in life – which makes me happy and sad at the same time…
I love that I have found so many great friends through here, and makes me want to re-evaluate some of my in person relationships.
Bottom line, I love you guys and thank you for being so supportive of everything!! :)

I hope I can be just as supportive to all of you!

Downward Dog... literally!

So I started my morning off with some yoga. (yay yoga)

Lance followed suit

I was laughing so hard!! 

I know, I know.. what can I say, I'm a proud doggie mama..

Yesterday I tried to eat pretty plain, as I have been having lots of tummy issues.

When I was having all my stomach issues in the past - my go to was brown rice cakes + peanut butter.
I also squished a date on top. 
this was breaky and it was good!!

Then for lunch, I got a little more adventurous.


Brown Rice cakes, cucumber and tuna


I mixed in some sun dried tomatoes.
It was yummy!! 

Then it was date night !!  Unfortunately it was pretty low key as I just wasn't feeling good.
We went for sushi (and Dave took some pictures with his phone, I was still too shy)

Dave had the Beef Terryaki Don Bowl

I like to steal a peice of the ginger (red stuff) and some of the left over rice... it's yummy and his favorite.

I had a super yummy roll (one of many)


It was sooo pretty and so tasty!! 
It was sweet, with a little crunch and a little pop!!
I always pick off the smoked salmon and eat it alone!!

I ordered WAY more.. I came with a very hungry tummy (and LOVE sushi)

I might have had this for breakfast this morning...  at 7am.

Dave also got me a bag of my favorite chips EVA...

I had a few.

Then I fell asleep around 9 while watching a movie - great date night huh?
I think I got up to brush my teeth and went to bed, and apparently slept through partying neighbors! 
They were loud enough that the cops came for a visit (so I was told!)

Anywhoo.. I hardly got anything done on my to - do list yesterday.
To be honest, my friend visited and that was it...  it was a bit of a write off day.

Today isn't looking great either...  *sad face*

What is your remedy when we just aren't feeling great and you can't seem to snap out of it?

A quick funny story for you and sushi.. drools

Ok. So I found my Christmas sweater for the Tacky Sweater tomorrow night!  Here is a sneak peak;


Let's just say... am about 90% sure I owned this when I was growing up.

Ok. the funny story.  So I take this and Dave's sweater up to the til at the hospital thrift store and the sweet old lady says "Oh dear, won't you look beautiful in this, are you wearing it on Christmas?|" 
She was so sweet and sincere, but it took every ounce of me not to laugh!!
I think it's one of those situations that you had to be there!!

There wasn't much to choose from, so we might go look again tomorrow!

After that I got my weekly fix of sushi - an avocado roll, and a shrimp roll. (and spicy mayo of course)


So good.    These may of slipped into my basket too


I need pretty dishes for blogging doing I?


I just got one of each, they are soo pretty!

PS. I've had a few emails about the newest selection of chocolate cups. 
The ones with cranberries, coffee beans and pecan don't have any peanut butter!!

Anyways, must go figure out the rest of my "outfit" for tomorrow night!!

Yummy Dinner!!!!!!

I think I may have died and gone to Heaven!!  I just made the most AMAZING pasta dish. YUM!!
Here were the ingredients

Whole Wheat Pasta
Organic Sweetie cherry tomatoes
Marinated Artichokes
Chicken Spolumbo Sausage - so good, no fillers!!
Sun dried tomatoes (did not use I couldn't get it open boo)
Spinach (also didn't use because I need them for my green monsters)
Sun dried tomato gourmet mayo- amazing

Things to add next time;
Spinach
Basil
Roasted Garlic
Roasted peppers/zuchinni


I cooked up the sausage and pasta and then tossed it all together...

Then I mixed in the mayo about 2 tbsp - It's hard to find "creamy" pasta sauce that has no dairy.
When I received this mayo as a gift, pasta was my first thought - It was amazing, creamy just like alfredo!


I honestly felt like I had died and gone to heaven!!  It was sooo decedent.
Glad I didn't have to share it with anyone though, now I have at least 2 more meals leftover YAY!!

Besides this wonderfulness, I went for an hour and a half long walk/pull with my parents and Lance.
It was quite the workout, as he hasn't been for a walk for awhile because of our insane wind/rain storms.
It was great.  I love the trail that we went on, and it's super close to home!   After that I came home and watched some Planet Earth - what an amazing show, if you haven't seen it yet, go get it NOW!!

I am officially done all my Amazing Grass samples and am in love!!  The chocolate was not for me at all.  I liked all the other flavors and I thought the wheat grass was fantastic.

If you live in CR and want to order any let me know and we can order together and split the (expensive) shipping!  Here is the website.  I really really don't like the chocolate one though, so if you want mine, maybe we can make a deal, I've only used 2 scoops out of it!! :)  


I'm obbessed with green monsters right now and have 2 per day for the last few days. 
My energy is great and I feel fantastic!!
(Besides being tired from the lack of sleep from all the adventures this weekend)

We had a great night with friends on Friday night... and then went for sushi last night with some newer-ish friends that are fabulous!!   We ate way to much and had a great time! I had miso soup, green tea, a dynamite roll (super spicy tempura prawn and veggies), spicy scallop roll and an avacado roll.  I took some home and ate it as a midnight snack YUM!!

I also went through a bunch of old pictures today...  haha.. I love memories... here are a few.

Update...

Hey guys,
So i'm feeling a wee bit better, the flu part is gone, now I just have a really bad cold.   I haven't been eating too much... so not too much to report.  The weirdest thing though.  Any bread products I've had (which is really the only think I 've been eating)  has smelt and tasted like rubbing alcohol...  so strange... and I've tried a few different things.  Must just be my stuffed up nose!!

I felt so lucky last night when I walked past Dave's office and saw this sweetness.  I snuck back into the kitchen to grab my camera and snap this picture.

How sweet are they??   I'm a lucky girl.

Anyways, I promise to write more soon, once I start eating more than toast!!  I started craving sushi today, so that's a good sign!!    I'll also have to post some of the yummy food that my work mama is bringing me!!   I heard it was chicken soup and berry crumble...  Thanks Karen (even though I'm not working there anymore, she still takes care of me!!)

PS.  I found out why my green monster went jellyish.  BLUEBERRIES!!  After reading a few other people's blogs, I found out that for some reason when blueberries are blended, they turn into a sort of jelly!!  Who knew??
