What was eaten…

Yes! It’s Thursday!! You know what that means?  This is my 4th blog post in a row!!  I hope you are all proud of me! haha Smile   Truth is, I wrote them all in 1 night, as I find that the easiest!! Then I can put some time and energy into it, and not feel rushed!

Ok… what’s next?

How about some random eats as of lately?

I love seeing meals that other bloggers have eaten, and recipes they have tested out, I hope you do too!!

First off, I made another batch of Oh She Glows Oatmeal Bars – this is one of my all time favourite recipes!

Especially right out of the oven with chocolate chips and a scoop of vanilla soy ice cream!

Up next – Super easy burritos!

I took a can of Amy’s Refried Black Beans, BBQ veggies and put it together in a wrap.

Wrapped it up and served it with some salsa and mmmm sauce!

It made about 7 wraps, which I wrapped up and froze for quick easy dinners!

And a little Asian Flair!

Chicken Goya's, steamed kale and kimchee!

Served with some fresh homemade juice which included.

2 stalks celery

1 apple

1 orange

1 carrot

handful of snap peas

and this.

AKA… carnage from my garden – Kale flowers and stems, chickweed and dandelions!

Weird yes – tasty yes!!  I was actually surprised it wasn’t bitter at all!

BTW. Someone emailed me the other day, asking why I never show breakfast!!  First off I don’t like super repetitive things, and any day that I have school or have to leave early, I made the same thing.

Veggies sautéed and scrambled with egg white and nooch, served in a brown rice wrap!! With some ketchup!   Boring but awesome – and it never ever upsets my temperamental stomach, plus it keeps me full for a few hours!

Another Super Easy and Quick Curry!

As you know, I LOVE curry!

I have previously shared recipes for my favourite Red Thai Curry

And for another easy Chicken Curry

This is a super easy one, with pretty healthy ingredients. 

We were both starving one night, and instead of going our for dinner we decided to pick up some goodies!

The curry was basically tomatoes and spices.  It said to only add it to chicken, but how boring is that?

We loaded it full of veggies and chicken

Poured the sauce over, and added about 1/4 cup of coconut milk – to make it a wee bit creamy!!

I am LOVING peas in my curry lately.  It adds sweetness without adding a fruit (like pineapple or mango).

Cook it all up until veggies are to desired crunchiness…

While it’s cooking, pop a pappadam into the microwave for 30 seconds! (we had 2 each).

If you are a microwave disliker – you can also pan fry them!!

I served this over a wee bit of brown rice…

I LOVED the pappadums – they were crunchy and salty!  I took some curry the next day to work sans rice and just ate it with pappadums!

Making curry from scratch is ideal of course, but these sauces make it so easy for a quick week night meal!

A Lunch Box!

As you all know, I love the blog City Life Eats

Valerie posts so many awesome lunch boxes.  I am continually inspired by her, so I am posting one of my own today!!

This was for a Pro-D Day at school and it was SO awesome!!

Top Left Corner going clockwise…

Hornby Island Pate (drool, more on that later).  Zucchini, Peppers and snap peas (Zucchini and Peppers are awesome vessels for the pate)!!  Black Berries, Gogi Berries & Chocolate chips and Raw Granola (sent by Spa Bettie!).  I thought the granola was crackers – oops!  It was still awesome though!

Ok, about this Hornby Island Pate…

It is one of the best things I have tasted in a long time!!  I spoke about the red pepper flavour a few weeks ago, and now I must boast about this one, which I like even more!

It’s a sunflower seed base, with spelt flour.  And it’s truly an amazing savoury staple in my life now!

I have not received anything from these reviews at all, I buy it with my own money and am just so in love!! If you live close to Vancouver Island you should try to find it… Drools!!

Stuffed Peppers!

I told you I would be back!! I’m sitting here in the sunshine writing all my posts for the upcoming week!!  I have so much great stuff to share with you guys!

It was so nice to hear from a few of you yesterday and to finally catch up on a bunch of blog posts.  I was reading all my regular blogs (see side bar) but I wasn’t commenting, only because I had about 100 to read!!

As promised, much better photos this post!!  Those iTouch photos are ugly!!  I had lots of fun taking pictures today with my good camera!!  Enjoy!

Anywhoo…  look at this amazing spectacle!

It’s a stuffed pepper! (YUM)!  I was reading one of my very favourite blogs SPA BETTIE!! and came across her awesome recipe for pizza polenta stuffed peppers!

While I thought they sounded amazing, I decided to try out some of my own flavours, so I cooked up..

1/4 cup millet with (no)chicken broth

Added in a 1/4 cup salsa

A sprinkling of ground coriander

1 TBSP Nooch

Chopped top of the pepper

And some daiya cheese (which I decided I’m not really a fan of).

Then I stuffed and baked as Spa Bettie did!!

I put it on broil for about 6 minutes to make the top crispy!!

Then I made some salad dressing -

The Nameless Dressing!

Into a small mason jar

1 TBSP sunflower seed butter

1 tsp brown rice miso

1 TBSP lemon juice

1/4 cup apple cider vinegar

Sprinkle of brown sugar

Dash of herb de providence (thanks to Char for the suggestion on this awesome spice!).

Shake like crazy until combined!

Serve it on lettuce and drizzle with salad dressing!

Amazing meal.  Better than I was even expecting!

The crunchy salad with the warm, creamy millet mixture and the tangy bite from the salad dressing! Ohhhhhhhhh yes!

Photo Sunday?

So I am still alive!

It’s been a crazy busy week for me, having something every night after my practicum and then a full day workshop yesterday!

I’ve been taking pictures  on my iTouch along the way though, and since it’s Sunday, and no one really reads on Sundays, I’ll leave you with some bad quality pictures of my week!! (iTouch’s don’t take very good pictures).

I also tackled the garden. It was a bit of a beast.

Apparently kale is amazing!  A friend mentioned last night that you can even eat the flowers!?  I’m going to test it out!

I’m growing kale, 2x tomatoes, cucumber, zucchini, spaghetti squash, beans (2 kinds), peas and a bunch of herbs  -  including peppermint, cilantro, dill.

I’ve also been enjoying my practicum SO much!  I am learning so much and getting so much hands on experience working with kids with Autism, Down Syndrome, Learning Disabilities, Sensory Disorders and other disabilities, it’s all SO fascinating!

This is one of the “visual schedules” that is used for our students.

It’s helpful to teach them self regulation techniques!

Yesterday I did an amazing workshop on Mental Health, Self Regulation, Sensory Disorders and Sensory Integration.

It’s a fascinating world!!  I’m SO excited to get more into the field!

We also tried out a new sushi place!  The lighting was terrible, but the sushi was fantastic!

And of course I have been spending time with friends watching hockey!! (Ok, I didn’t watch hockey, I sat outside in the sunshine!)

So it’s been a great week, I’m really excited to have 2 days off now – and then only 4 days left of my practicum and then I am GRADUATED!!!!!!!!!!!!!!! Smile  and free for the summer!
