I am feeling so re-inspired to blog after popping into a good friend shop yesterday!! It’s so awesome to know that people are reading and loving what you write! Thanks Mel!
Anyways – have you ever dreamed about caramel apples for breakfast? Mmmmm if you know me at all – you know I go crazy over anything caramel. What do I miss about being dairy free? Cheese – nawh, butter – nope, caramel – hell ya.
So I sometimes poke through random posts to see what I was writing about and I found this post – about caramel sauce that will change your life.
Apple sliced up
equal parts tahini and maple syrup – make sure to mix it well to make sure the tahini is all mixed in, so you don’t get a bitter bit! Add a bit of warm water to thin it out. Then add whatever toppings you like!
I added some kamut cereal, crasins and some crushed walnuts!
This sauce would be AWESOME over oatmeal, drizzled over banana soft serve or another dairy free ice cream!
Really the possibilities are endless!! Plus it’s good for you – if you buy real maple syrup it’s got lots of vitamins in there and tahini is apparently a great source of calcium!!
Now for news I’ve been DYING to mention!
I GOT A JOB AT A ZUMBA/FITNESS STUDIO!! (yes I’m screaming!)
I just went to school for 10 months for something completely different, but am absolutely so excited about this job!!
I will be doing front desk stuff when it opens!
I am so excited about working there – being part of the positive energy that I know will be flowing from the doors of that place! I will still be doing respite care as well as applying for jobs with the school district – but I will be soaking up every second I can with this job, and hopefully carrying on even while doing the other stuff too!
Anyways, I’m just so excited – but have wanted to wait to officially mention it!
