Mom’s Muffins and a challenge for YOU!

Do you have a favorite family recipe? 
One that made your mouth water when you were driving home to visit your family?
This is mine.
 
My lovely Mom has been making this recipe forever

Any time I would come home to visit (especially when I lived away)
I would fight with my dad over these, as I would eat them at every meal! 

One side with peanut butter and honey, and one side with melted cheddar cheese *gasp*
(obviously before my dairy free days)

Here it is folks
(ps. This is her top secret recipe so send her some love for sharing)


We are also looking for some substitutes to make these a wee bit healthier, gluten and dairy free
so please feel free to help think of some changes for the highlighted/bolded areas!

Mom’s OAT BRAN MUFFINS

300 DEGREES FOR 20 MINUTES
MAKES 45 MEDIUM MUFFINS

2 CUPS BOILING WATER
2 CUPS BRAN
PUT IN A BOWL 1 AND LET SOAK

5 CUPS FLOUR (she would like them 100% gluten free)
5 TSP BAKING SODA
1 TSP SALT
PUT IN BOWL 2 TOGETHER

1 CUP SHORTENING
3 CUPS SUGAR – BROWN & WHITE MIXED
4 EGGS
1 LITRE BUTTERMILK
4 CUPS OATS
2 CUPS RAISINS OR ASSORTED OTHER THINGS
IE: SHREDDED CARROT, BANANA, DRIED APRICOT ETC.
Into bowl # 3

MIXED ALL INGREDIENTS TOGETHER
These are the ones she made with some “amazing grass wheat grass”  GREEN MUFFINs YES!!

Mmmmmmmmmmmmm so good…  I haven’t had one in almost 2 years :( 
So help us make them “Dairy Free Bettified!!”

ps. My parents are doing an amazing job of eating healthy! Their fridge is full of nuts, seeds, fruit, veggies, earth balance.
And they are always making new gluten free recipes
(Qunoia salad!)
YAY to them!!

  4. Yum! Those look and sound wonderful! I wonder how they would turn out if you used applesauce in place of the shortening? I don't buy shortening :( It would lead to too much baking!!

    all my mother's recipes are full of gluten, dairy, and eggs which i am allergic to. so i have had to reinvent the (raw vegan) wheel, but it's been fun!

  14. It's great that your parents are eating healthy! I'm trying to get my parents to do so too!

    Dairy Free-ifying the muffins... would you use soy/almond/hemp milk + white vinegar? I know as a buttermilk sub you can use milk and vinegar (I believe it's 1 cup milk + 1 tbsp vinegar)
